Makan di Sate Khas Senayan Yuk

Minggu ini saya berkesempatan untuk mencoba beberapa hidangan yang ditawarkan oleh Sate Khas Senayan. Restoran ini telah beroperasi selama lebih dari 30 tahun dan memiliki menu yang merupakan hidangan tradisional khas Indonesia. Dengan menawarkan beragam pilihan serba tradisional, aneka menu di SKS menunjukkan karakter yang unik dari masakan Indonesia. Kebetulan mereka baru saja membuka dua buah gerai sekaligus di area Kelapa Gading. Satu gerai Sate Khas Senayan dengan model Express terletak di Food Court Mal Kelapa Gading 3 dan satu lagi yang bercorak Full Dining terletak di Inkopal Kelapa Gading. Sayapun segera meluncur ke sana untuk mencoba sendiri kelezatan hidangan yang ditawarkan Sate Khas Senayan.

Sesuai dengan namanya, restoran ini memang terkenal dengan hidangan satenya. Ada tiga jenis sate yang mereka tawarkan, Sate Ayam, Sate Ayam Bumbu Pedas Blra dan Sate Kambing. Saya memesan satu porsi Sate Ayam, hidangan ini tiba di meja di sebuah piring datar dengan bumbu kacang yang dicampur kecap. Apakah ini sama dengan hidangan sate ayam yang biasa kita temui di mana-mana? Salah besar! Sebagai permulaan, perbedaannya ada pada bumbu kacangnya. Kacangnya telah diproses sehingga benar-benar lembut dan memiliki rasa kacang yang pekat. Keunikan lainnya terletak pada daging satenya. Berbeda dengan hidangan sate ayam biasa di mana terdapat 3-4 potong daging pada setiap tusuknya, sate yang mereka hidangkan merupakan satu potong daging utuh. Meskipun demikian, kita tidak akan mengalami kesulitan saat memakannya karena dagingnya sangat mudah untuk digigit hingga terurai menjadi potongan kecil. Ini dikarenakan daging yang digunakan diolah dari paha ayam yang memang merupakan bagian paling empuk dari seekor ayam.

Menu lain yang sempat saya coba adalah Tongseng. Kuahnya sedikit lebih pekat daripada hidangan tongseng kebanyakan dan memiliki rasa yang lebih pekat dan gurih. Daging kambingnya juga sangat empuk dan gampang dipisahkan dari tulangnya. Selain itu, masih ada beberapa hidangan lain yang tidak kalah lezatnya seperti Ayam Goreng Kremes, Sop Buntut, Tahu Kipas, dan Lontong Cap Gomeh. Mereka juga memiliki varian hidangan nasi yang cukup banyak. Beberapa di antaranya adalah Nas Langgi, Nasi Kuning, Nasi Begana, Nasi Uduk, Nasi Gudeg dan Nasi Kerawu.

Untuk hidangan penutup, Sate Khas Senayan memiliki rupa-rupa hidangan es tradisional. Ada Es Coklat Kacang Merah, Es Wedang Tape, Es Cincau, Es Campur, Es Cendol dan Es Merah Delima. Saya sempat merasakan sendiri bagaimana rasa dari Es Merah Delimanya. Delimanya terasa manis dan empuk, benar-benar pas di lidah. Sekedar info tambahan ya, Sate Khas Senayan menawarkan dua pilihan menu, a la carte dan combo. A la carte merupakan menu satuan tetapi combo menawarkan hidangan yang lebih lengkap dan ekonomis karena telah menyertakan nasi.

Sate Khas Senayan adalah salah satu restoran yang membuktikan bahwa makanan tradisional tetap memiliki tempat tersendiri di masyarakat. Dari restoran pertamanya di jalan Pakubuwono VI no. 6 sampai cabang ke-18nya di Inkopal Kelapa Gading, terbukti tidak pernah sepi pengunjung. Mereka bahkan telah membuka layanan baru yaitu delivery. Layanan delivery tersebut mereka namakan Call Aja dan saat ini telah melayani permintaan dari seluruh pelosok Jakarta.

Sate Jamur untuk Vegetarian

Sate jamur, kuliner satu ini mungkin masih asing bagi masyarakat. Namun sate jamur memang menjadi menu favorit baru di kota Banyuwangi. Warung makan yang menyediakan menu ini adalah Warung Ibu Tina yang terletak Jl. Raya Kepiting Banyuwangi. Lokasi warung milik Agustini, (49) warga Lingkunngan Stendo, kelurahan tukang kayu ini berada di kantor lama Partai Kebangkitan Bangsa (PKB).

Bagi anda yang belum pernah merasakan nikmatnya sate jamur, anda akan menyangka sate yang anda makan adalah sate ayam. Karena memang kelezatannya mirip dengan sate ayam. Meski demikian rasa khas jamur yang gurih dan sedikit kenyal tetap bisa di rasakan.

Dipadukan dengan kacang pada bumbu satenya menambah kenikmatan sate jamur. “Tentu saja ada bumbu rahasia dalam sate buatan saya,” aku Agustini yang di kenal dengan panggilan Tina, Senin (26/7/2010).

Untuk menikmati kelezatan sate jamur milik ini kita tidak perlu mengeluarkan uang yang besar. Hanya dengan Rp 10 ribu saja, kelezatan 10 tusuk sate jamur sudah bisa kita nikmati. Jika ingin memakannya dengan nasi atau lontong kita hanya perlu menambah uang Rp 2 ribu saja. Warung sate jamur Tina buka sejak pukul 10.00 WIB pagi hingga pukul 21.00 WIB.

Setiap harinya, setidaknya Tina menghabiskan 7 kg jamur tiram sebagai bahan baku. Jumlah itu menurutnya terus bertambah seiring dengan bertambahnya peminat sate jamur. Menurut Tina, setiap kg jamur tiram rata-rata bisa dibuat menjadi 60 tusuk sate jamur.

Sate jamur, selain sedap juga rendah kolesterol. Sehingga bagi mereka yang punya masalah kolesterol tidak perlu takut untuk makan sate yang satu ini. Sate jamu juga menjadi makanan alternative bagi para Vegetarian. Tidak sedikit vegetarian yang memilih sate jamur sebagai makanan pengganti sate.

“Biasanya kalau saya ingin makan sate khusus vegetarian saya harus ke Bali, sekarang tidak lagi,” ujar Wiriyanto, seorang vegetarian penikmat sate jamur.

Sate Kere

Jangan berprasangka dulu dengan makanan satu ini. Kere memang salah satu kata dalam bahasa Jawa yang berarti miskin. Tapi bukan berarti Sate kere ini miskin rasa atau hanya diperuntukkan bagi orang miskin. Anda salah besar. Sate kere justru merupakan satu sate yang kaya rasa. Orang Jawa menyebutnya sugih rasa.

Jika berdomisili atau sedang mampir ke Solo, Anda bisa menemui sejumlah depot makanan yang menawarkan menu sate kere. Salah satunya di Pasar Legi, Kauman, Solo. Di depan gang II pasar tersebut, ada sebuah gerobak milik pak Atien yang sudah menjajakan sate kere sejak 10 tahun lalu.

Pak Atien, yang membuka gerobaknya sejak pukul 12.00 WIB sampai sore hari, tampak begitu menguasai mengenai seluk beluk sate kere. Maklum, ia sudah berdagang selama 10 tahun. Terlebih usahanya merupakan terusan dari mertuanya yang sudah lebih 20 tahun berdagang di tempat itu.

Sate kere yang ditawarkan Pak Atien adalah sate daging tetelan, babat, hingga kulit sapi atau kikil. Meski demikian, yang paling khas di sini adalah tempe kedelai dan tempe gembus. Ini adalah tempe yang terbuat dari ampas kedelai sisa pembuatan tahu.

Semua bahan sate kere ini dipotong terlebih dahulu dengan ukuran memanjang 5 x 10 sentimeter dan ditusuk dengan tusukan kayu. Sebelum ditusuk untuk dipanggang, bahan sate kere direbus sekitar dua jam bersama bumbu bacem agar meresap, terutama buat kulit sapi, kikil dan babat sehingga terasa empuk saat digigit. Bahan yang direbus bumbu ini kemudian diangkat dan direndam kembali dengan bumbu baru. Saat kita pesan, bahan baru dibakar selayaknya sate, dan dihidangkan dalam pincuk daun pisang.

Bumbunya sendiri mirip dengan bumbu pecel. Hanya saja, bumbu sate kere lebih terasa kencur dan cabe rawitnya, serta lebih encer. Wangi jeruk purut juga menambah selera saat kita mengunyah potongan-potongan sate.

Harga yang ditawarkan Pak Atien cukup beragam. Untuk sate daging tetelan, Atien memberi harga Rp 1.000 pertusuk. Ice cream Ragusa yang enak

Siapa yang tak kenal dengan Ice cream? hmm… pasti semua pernah mencobanya, anak-anak sampai orang tua semua suka Ice cream, apalagi disajikan dalam kondisi cuaca yang panas siang hari, lebih-lebih kalau Ice cream gratis…

Usai meeting bersama teman-teman, saya sempatkan mampir ke sebuah tempat Ice cream bernama Ragusa, tempatnya ada di Jalan Veteran, dekat Masjid Istiqlal Jakarta Pusat. Konon katanya Ice cream disini (Ragusa) enak dan beda dengan es krim lainnya, karena katanya Ice cream tradisional tanpa pengawet, dan yang lebih seru adalah makan ditempat.

Tanpa pikir panjang kami pun memesan beberapa jenis Ice cream yang tersedia. Sambil menunggu Ice cream, pelayan memberikan segelas air mineral, dan tak berapa lama Ice cream yang kami pesan disajikan. Ice cream disajikan ke mangkuk aluminium, mumpung Ice cream masih dalam kondisi “mulus” saya pun tak lupa untuk mem-fotonya

Ice cream Ragusa ternyata memang beda dari Ice cream yang lain, punya khas tersendiri, dan memang fresh. Namun kita tak dapat berlama-lama menikmati Ice cream tersebut, karena tempat Ragusa tidak difasilitas pendingin ruangan (AC) hanya kipas angin (karena tradisional mungkin), dan ini membuat Ice cream cepat mencair, dan akan beda rasanya jika dinikmati, bukan Ice cream lagi, tapi air krim. Enaknya Sate Madura

Sate Madura umumnya adalah Sate ayam yang diberi sambal berupa saus kacang. Namun di Madura sendiri kadangkala yang dipakai bukanlah saus kacang namun saus atau sambal kemiri. Selain itu seringkali arang pembakaran Sate ini sering ditaburi dengan jeruk limau.
Untuk meraup lebih banyak keuntungan, pedagang Sate sering mencampur bumbu kacang dengan nasi kering yang telah dihaluskan. Nasi kering ini, dalam bahasa Bali disebut senggauk, merupakan nasi sisa yang dijemur di bawah terik matahari. Di beberapa daerah di Jawa, seperti pesisir utara, sepanjang pantura (pantai utara) meliputi daerah Indramayu, Brebes, nasi semacam itu disebutnya nasi aking. Umumnya dimakan orang-orang miskin yang tidak mampu membeli beras yang termurah sekalipun.

Sate Madura biasanya terbuat dari ayam. Madura selain terkenal sebagai pulau garam, juga terkenal dengan Sate-nya. Sate madura sudah terkenal di seluruh Nusantara, Sate Madura dapat ditemukan hampir di semua daerah khususnya di kota besar seperti Medan, Jakarta, Bandung, dan Surabaya. Konon di Madura sendiri Sate susah dicari. Tetapi selain ayam sebagai bahan utama Sate juga ada yang menggunakan kambing yang ditandai dengan digantungnya bagian kaki belakang si kambing di rombong sang penjual Sate. Bumbunya adalah campuran kacang yang ditumbuk halus petis dan sedikit bawang merah. Memanggangnya dengan api dari batok kelapa yang dihanguskan lebih dulu yang disebut dengan arang batok kelapa. Rasanya gurih tapi dipantangkan kepada mereka yang berkolesterol tinggi dan yang pengidap asam urat akut.

Soto Gebrak Cabang Margonda Raya

Warung Soto tersebar di mana-mana. Penjual satu dan lainnya berusaha menyajikan racikan bumbu dan olahan yang bisa memikat lidah tamu. Rasa sedap diyakini jadi faktor ampuh untuk menjaga kesetiaan lidah. Namun di tengah persaingan yang kuat, faktor tadi dirasa tak cukup. Perlu ada sensasi lain agar tercipta ciri tersendiri.

Brak!!! Suara bantingan botol kecap yang beradu dengan papan kayu amat memekakkan telinga. Gelegarnya nyaris memenuhi seluruh ruang makan sederhana itu. Buat yang tak biasa, suara ini jelas bikin kaget. Hasil benturan tadi lumayan membuat jantung berpacu di atas rata-rata.

Seorang yang belum pernah berkunjung ke rumah makan ini sempat kaget waktu mendengar benturan ini. ”Brakk!!!” Suara benturan botol kembali menggelegar.

Kalau sempat mampir ke Soto Gebrak Cabang Margonda, boleh jadi Anda akan dapat kehebohan yang sama. Asalkan jangan marah, gebrakan botol kecap akan mendapat sambutan ”meriah”. Suasana pun menjadi heboh.

”Biasanya, kalau ada tamu yang belum pernah datang ke sini, kaget dan langsung marah setelah mendengar gebrakan itu,” ujar cak Ratno Subagyo (39), pemilik Soto Gebrak cabang Margonda Raya.

Untuk itu cak Ratno Subagyo, anak pertama dari cak Anton, begitu bapak tiga anak itu disapa, sudah menulis besar-besar moto rumah makan ini, ”Senyum boleh, marah jangan.”

“Perjalanan Soto gebrak dimulai pada tahun 1973. Cak Anton memulainya dengan membuka warung kaki lima, di Jalan Setiabudi Raya. Kira-kira ada di belakang gedung Chaze Plaza. Pada 1981, tempat berdagang pindah ke depan SMUN 3. Selain di Setiabudi, Soto gebrak bisa ditemui di Jalan Tebet Utara I, Kalibata Raya dan Margonda Raya ini,” ungkapnya.

Nama itu mulai resmi dipakai sejak tahun 1991. Agar tak dijiplak, nama ini sudah masuk daftar paten. Sedangkan bunyi gebrakannya sendiri sebagai pertanda bahwa pesanan Soto sudah siap diantar kepada pengunjung.

Popularitas Soto ini terdongkrak karena sering ditongkrongi pelawak dari Grup Srimulat. Dari Alm. Subagyo, Kardjo ACDC, Tessy, Basuki, dan seterusnya. Waktu itu, tiap kali habis manggung di Ancol, mereka selalu makan di tempat Cak Anton.

Tertarik untuk mencicipinya? Datang dan duduklah lalu lihat daftar menu diatas meja. Anda dapat memilih jenis soto yang diinginkan. Ada Soto, daging, Soto ayam, Soto campur jeroaan.

Sebagai pelengkap Soto, ada pula berbagai jenis gorengan yang tersaji di atas meja makan, misalnya Sate usus, Sate telur, Sate empal, telur asin, perkedel. Untuk minumnya tidak ada yang istimewa dari es the manis, es jeruk, marqisa, lemon tea, juice tomat, juice alpukat, teh botol, dan aneka soft drink.

Saat Soto diantar pelayan, terlihat kuah Soto berwarna kekuningan dan tidak menggunakan santan. Inilah ciri khas Soto asal Jawa Timur. Diakui oleh Cak Ratno, dia memang ingin menunjukkan budaya dan makanan khas asal daerahnya.

Kuah Soto sangat terasa bumbunya. Dagingnya sangat empuk dan cocok disantap bersama gorengan yang tersedia. Satu porsi Soto dibandrol dengan harga Rp13 ribu s/d Rp15 ribu, plus nasi. Sate di tepi pantai

Mau di mana pun tempatnya, masakan Sunda selalu menjanjikan rasa yang khas. Seperti rasa Sate maranggi yang dihasilkan rumah makan Saung Kuring di kawasan Pantai Ancol, Jakarta Utara.

Menikmati suasana pantai menjadi salah satu pilihan untuk menghilangkan stres. Demi mendapatkan suasana rileks, tak ada salahnya kita juga mencicipi hidangan asal Tanah Pasundan yang bernama sate maranggi. Berbeda dengan Sate yang banyak dijual di Jakarta dan berasal dari Madura, Sate maranggi bisa dikatakan makanan khas Purwakarta, Jawa Barat.

Namun, beberapa orang ada pula yang berpendapat bahwa Sate maranggi berasal dari Cianjur atau sekitar kawasan Cipanas. Aroma wangi dari bakaran Sate maranggi tercium saat Seputar Indonesia (SI) memasuki rumah makan Sunda berlabel Saung Kuring, yang berlokasi di Pantai Indah Ancol.

Rumah makan yang berdiri sejak dua tahun lalu ini, tepatnya pada Januari 2007,menurut pemiliknya, Ade Norman, memang menjadikan Sate maranggi sebagai salah satu menu andalan.

"Bagi para pencinta masakan Sunda, terutama Sate maranggi, tidak usah jauh-jauh pergi ke Cianjur, karena di Ancol pun tersedia Sate maranggi dengan rasa yang tidak kalah enak," ujarnya.

Ade menambahkan, walau umumnya Sate maranggi terbuat dari daging kambing ataupun sapi, khusus di Saung Kuring, bahan baku utama yang dipakai adalah daging sapi.

Perbedaan Sate maranggi dengan jenis Sate lainnya terletak pada bumbu yang terbuat dari kecap serta memiliki cita rasa campuran antara manis, asam, dan pedas. Perpaduan rasa tersebut sangat terasa menyentuh lidah saat SI menikmati Sate maranggi. Satay / Sate Coconut

Sate Kambing Sederhana

Banyak sekali resep untuk Sate kambing. Tapi saya biasanya memakai resep sate kambing ala warung sate di dekat rumah saya di wilayah Banyumas, Jawa Tengah. Bukan mendapat resep dari mereka, tetapi dari saya melihat bagaimana mereka menyiapkan sate.

Kunci sate kambing, menurut pengalaman saya, ada pada dagingnya. Cari kualitas kambing muda terbaik, dibakar tanpa bumbu pun dijamin enak. That's exactly yang dilakukan warung sate langganan keluarga kami.

Mereka hanya memakai kecap yang ditambah sedikit minyak goreng (yes, kecap saja, tanpa bumbu lain) untuk kemudian dibakar sampai tingkat kematangan yang diinginkan Hasil terbaik, tentu saja, jika dibakar dengan arang. Tetapi jika tidak memungkinkan, dengan grill atau oven pun bisa. Di rumah - kecuali ketika summer dimana saya selalu menggunakan arang di kebun belakang- saya menggunakan grill listrik kecil. Sangat handy untuk membakar porsi kecil, cukup dikonsumsi sekali makan.

Dan saya akan membakar lagi untuk makan selanjutnya. Karena sate kambing, paling enak disajikan panas, langsung dari pembakaran. Atau bisa saja dibakar seluruhnya dan dipanaskan dengan microvawe saat akan disajikan.

SATE KAMBING ( Lamb Satay)
500 gr daging kambing muda segar (lamb)
Lemak kambing, jika suka (lamb fat, optional) -> tapi akan lebih enak jika pakai lemak.
Tusuk sate (bamboo skewer)
Kecap manis (dark soy sauce)
Minyak goreng beberapa sendok

Bumbu kecap (for the sauce):
3 butir bawang merah (shallot, but 1 onion also works perfectly well)
1 buah tomat besar (tomato)
5 cabe rawit (bird eye chilli), ditambah jika suka pedas

Irisan jeruk limau jika ada, atau jeruk nipis (lime or lemon)
Kecap manis
Potong-potong semua bahan, tambahkan kecap dan aduk sampai tercampur.

Cara Membuat:
* Daging kambing dipotong dadu, kira-kira satu tusuk 4-5 potong.
* Tusuk potongan kambing dengan tusukan sate, selang seling dengan potongan lemak, jika suka.
* Celupkan di campuran kecap manis dan minyak goreng.
* Bakar lagi sampai tingkat kematangan yang diinginkan.

Sajikan dengan bumbu kecap dan taburi lada halus jika suka.(susilo typepad)

Es Krim Cokelat yang menjadi Favorit

Apakah Anda seorang pecinta cokelat? Apakah Anda suka makan Ice cream? Jika Anda seorang pencinta coklat, Anda tidak akan terkejut mendengar bahwa Ice cream coklat adalah favorit orang Amerika. Filet in France

A beef tenderloin, known as an eye fillet in New Zealand and Australia, filet in France and fillet in England, is cut from the loin of beef. As with all quadrupeds, the tenderloin refers to the psoas major muscle anterior to the transverse processes of the lumbar vertebrae, near the kidneys. This muscle does very little work, so it is the most tender part of the beef. The tenderloin can either be cut for roasts or for Steak. Tenderloins from steers and heifers are most common at retail, but those from cows are common in foodservice applications, such as less expensive steakhouses.

A common misconception is that the tenderloin is also called a Chateaubriand steak, when in fact, the Chateaubriand is a recipe for a particular tenderloin steak which originates from France. Typically, the Chateaubriand is taken from the center-cut of the tenderloin, in a large enough portion to feed two. There are three main "parts" of the tenderloin: the butt, the center-cut, and the tail. The butt end is usually suitable for carpaccio, as the eye can be quite large; cutting a weight-portioned steak from the butt will invariably yield a very thin steak. The center-cut is suitable for portion-controlled steaks as the diameter of the eye remains relatively consistent. The center-cut can yield the traditional 'filet mignon' or tenderloin steak, as well as the Chateaubriand and Beef Wellington. The tenderloin tapers off into a tail, which is generally unsuitable for steaks due to consistency of size concerns, but can be used in recipes where small pieces of a tender cut is called for, such as Stroganoff.

Whole tenderloins are sold as either "unpeeled" (meaning the fat and silver skin still remains), "peeled" (meaning that the fat is removed, but silver skin remains) or as PSMOs ("pismos"), which is short for peeled, silver skin, and side muscle left on. While the most expensive option pound-for-pound, PSMOs offer considerable savings over other tenderloin options as they require little handling by the chef, as the fat and trimmings are already taken care of. Trimming the silver skin from a tenderloin is a job best not left for the novice, as inexperienced meat cutters often damage the steaks, reducing either yield or the visual presentation. Since, as the name implies, it is the most tender part of the animal, beef dishes requiring high quality meat, such as steak tartare, are ideally made from the tenderloin. (wikipedia)
